Green Olive Cornbread Stuffing

- 8 cups of 1/2 inch cubed cornbread
- 4 tablespoons of unsalted butter
- 4 stalks of chopped celery
- 1 large chopped onion
- 1 teaspoon of thyme
- 2 tablespoons of parsley
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup of cream
- 1 cup chicken broth
- 3/4 cup green olives
Preheat the oven to 350°F.
Toast the cubed cornbread in the oven on a baking sheet for approximately 15 minutes until it feels dry when touched and the edges appear golden brown. Allow to cool and then transfer the cubes to a large bowl. Lightly sauté the onion and celery for 5 minutes and then add the thyme, parsley, pepper, salt, sage and olives and continue to cook for another 5 minutes. Let cool.
Stir the mixture into the bowl containing the cornbread. Whisk together the cream, the broth and the eggs in a separate bowl and then pour it over the cornbread mixture. Place in a baking dish measuring 9″ x 13″ and then bake for approximately 35 minutes or until it looks crispy and brown at the top.
